This banana dosa was my breakfast food for most of my college days. It started earlier in the morning than the rest of my family.
My mom makes these for my breakfast, as they are straightforward to make with very few ingredients. Sometimes, I also urge her to pack the same thing for lunch. It stays good after hours and is easier without messing up the fingers.

If you want a healthier, fibrous version of this dosa, substitute maida(all-purpose flour) with whole wheat flour. You may also try this similar banana dosa/crepe made withwhole wheat oats.
The kids will love banana dosa because of its sweet taste and banana flavor. If the kids struggle to eat fruits, infuse them into their favorite dish.
How to Make Banana Dosa:
Sieve maida if necessary. Add maida / all-purpose flour, sugar, banana, and salt to a bowl.
Mash the banana until it turns mushy. Hint: It's okay if there are small chunks of banana; these small chunks add more texture to the dosa.
Add about a quarter cup of water until it forms a paste. The batter should not be either thicker or too thin. It has to be in a thick, flowing consistency.
Drizzle a few drops of oil, and pour a ladle of batter over the hot pan. Again, drizzle a teaspoon of cooking oil around the dosa. In medium heat, cook it for about 2 minutes.
Flip it and cook again for another 1-2 minutes until they get cooked thoroughly. Once done, remove it from the tawa, transfer it to the plate, and serve banana dosa immediately.
