Easy & Delicious Salted Caramel Sauce Recipe – Simply Southern Mom (2024)

Written by Pam Published on

One of my favorite Fall flavors is Caramel. I want to add it to everything; caramel apples, caramel apple dip, caramel pie, whatever. As I was reaching for a jar of caramel sauce in my fridge, I thought, “I could make this and it would taste better.” I searched through my cookbooks until I found a basic recipe for caramel sauce and then I adapted it to suit our tastes. For those of us who used it on a bowl of ice cream, it was wonderful. Smooth, creamy, and rich with a hint of saltiness. For my son-in-law, Justin, who thought it was the salad dressing I had made and used it on his salad, it wasn’t as good. Live and learn. If you’re ready to serve your family an easy and delicious salted caramel sauce recipe, this recipe is for you!

For a deep rich caramel taste, I used real butter and dark brown sugar. I tried it with light brown sugar, and while tasty, it didn’t have the rich caramel taste I wanted. Tip: I wanted my homemade caramel sauce to be thicker, so I added some cornstarch. If you prefer a thinner sauce, omit the cornstarch. Did I mention that this caramel sauce is naturally gluten-free so everyone, including the Celiacs in the family, can enjoy it? Plus, it takes only minutes to make!

Easy & Delicious Salted Caramel Sauce Recipe

Ingredients

  • 1 cup (8 ounces) packed dark brown sugar</span>
  • 1/2 cup butter ( 4 ounces), softened
  • 1 teaspoon vanilla
  • 2 teaspoons coarse sea salt
  • 1/2 cup heavy cream (you can substitute whole milk if you prefer, although the sauce will not be as rich)
  • 1 to 2 teaspoons cornstarch, depending on how thick you want your sauce

Instructions

  1. Mix brown sugar and butter together in a medium saucepan. Cook over high heat until mixture begins to bubble, but not boil. You will need to stir the mixture often to prevent burning. Reduce heat to medium. Add vanilla, cream, and cornstarch (if desired) and cook, stirring constantly, for five minutes until mixture thickens and turns a rich brown color. Remove from heat and stir in sea salt. Serve immediately or store in fridge until ready to use.

This caramel sauce can be served hot or cold. I like to keep some in an airtight container in my fridge for a treat. We use it with ice cream and to make a delicious caramel apple dip. Just mix a little cream cheese and frozen whipped topping with some caramel sauce. Voila! Instant fruit dip!

FAQs

Why is my homemade caramel sauce chunky? ›

This can happen if sugar crystals form on the sides of the saucepan or if the sugar syrup is mixed too much while cooking. Adjust the Heat: If the caramel cooked at a high heat, causing it to crystallize or burn, lower the heat for future batches.

How many parts of sugar and water to make caramel? ›

The main ingredient for making a caramel is sugar. A liquid caramel can be made using any quantity of sugar or water just as long as it follows the ratio of 2 parts sugar: 1 part water.

What does butter do in Carmel? ›

Some form of dairy — typically butter and/or heavy cream — is usually added to the mixture at either the beginning or the end of cooking. This addition makes the caramel richer, thicker, and lighter in color, lending more viscosity and rounder flavor.

What thickens homemade caramel? ›

To thicken a caramel sauce, use one tablespoon of cornstarch or tapioca starch (sometimes known as tapioca flour) and one tablespoon of water per cup of caramel. Then simmer the caramel, stirring it constantly with a wooden spoon until it becomes thick.

Why does my homemade caramel taste bad? ›

You're Not Watching the Pot and the Syrup Got Too Dark

Caramel isn't one of those things you can set and forget—once the sugar starts to brown, the caramelization process happens quickly. If you're not careful, the sugar can burn and take on a bitter, unpleasant taste.

Why do you put vinegar in caramel? ›

Add acid. Acid ingredients (like vinegar or lemon juice) can help prevent re-crystallization which causes caramel to become grainy. Acid physically breaks the bonds between the glucose and fructose molecules that form sucrose and ensure that it stays apart.

Should you stir sugar when making caramel? ›

After a minute or two, the sugar will start to melt and darken in color, from the outside of the pan inwards. Do not stir, but instead swirl and shake the pan to distribute the caramelized sugar in and around the unmelted sugar and to promote even browning. Watch it carefully to make sure it doesn't burn.

What is the formula for caramel? ›

The typical formula for caramels is C24H36O18 , so the elements of water have been removed from the sucrose.

What to do if caramel doesn t set? ›

you simply haven't cooked it enough-- possibly your microwave is less powerful (the original recipe doesn't specify a wattage for cooking the caramel) or the butter you used has a higher water content. You could try cooking the mixture for a little longer, and seeing if it sets up firmer.

Why is my homemade caramel sauce not thickening? ›

Add more sugar to the sauce.

Most caramel sauces are made by caramelizing sugar and adding milk and a little salt. If you increase the amount of sugar in the recipe you'll end up with a thicker caramel. Try increasing the sugar by about 1/3.

What is the difference between caramel sauce and dulce de leche? ›

Caramel and dulce de leche might look and taste somewhat similar, but they are actually pretty different. While caramel is made from slowly simmering water and sugar until it caramelizes, dulce de leche is made from simmering milk and sugar super slowly until it turns into a creamy, caramelized substance.

What happens if I forget to put butter in my caramel? ›

Yes, you can make a caramel sauce without butter, but you have to add either water or... something else. If you use water, you'll get a pure caramel syrup that looks like honey.

What happens if you add too much butter to caramel? ›

If you have added too much butter to your caramel sauce, you may find that it is too oily or it might even begin to separate. To fix this, add 1 tablespoon of either water or milk and stir while cooking over medium heat. Adding 1-2 Tbsp of a simple cornstarch slurry may fix the problem, as well.

Why is the butter separating from my caramel sauce? ›

The butter, sugar and syrup are melted together and should form a smooth sauce. When the sauce cools it should remain amalgamated. If the butterfat separates out then usually this is due to the mixture being either heated or cooled too quickly, which "shocks" the mixture and causes the fat to separate out.

How do you fix clumpy caramel? ›

Graininess occurs when the sugar in caramel sauce hasn't completely dissolved before adding in butter and heavy cream or if the caramel is cooled too quickly. Luckily, you can bring grainy caramel sauce back to a smooth, creamy consistency with an easy fix. Simply reheat it on the stovetop and add more liquid.

How do you fix clumps in caramel? ›

Your caramel may begin to get lumpy and grainy, but don't worry. Just lower the heat and keep stirring. Any stubborn chunks should melt as you continue. If not, they can be strained out later and should be such a small quantity that they won't likely affect the outcome of the recipe.

How do you get lumps out of caramel sauce? ›

If clumps of sugar form (crystallization), continue heating on low heat until they melt back into a smooth sauce. The caramel will bubble here, so take caution not to allow your hand too close to the mixture. Use only heatproof utensils and a pot deep enough to catch any bubbles.

How do you fix curdled caramel sauce? ›

Literally just add a tablespoon or two of corn syrup to your new pot of dissolved caramel liquid, cook it up to the consistency you want, and you probably won't get crystals again. You can use any inverted sugar syrup in place of corn syrup though.
