  1. Preheat the oven to 350°F and line two baking sheets with parchment.

  2. Whisk together the almond flour, baking soda, and salt in a bowl.

  3. In another bowl, stir together the coconut oil, So Nourished pancake syrup, vanilla, and liquid stevia extract until smooth.

  4. Stir in the dry ingredients until it forms a smooth dough, gathering it by hand if needed.

  5. Pinch off pieces of dough and roll them into 1-inch balls.

  6. Combine the granulated erythritol and ground cinnamon in a small bowl.

  7. Roll the dough balls in the erythritol and cinnamon mixture then place them on the baking sheet, spacing them 1 to 2 inches apart.

  8. Gently flatten the cookies and bake for 8 to 10 minutes until the edges are firm.
