We combined a snow cone with our other summer time favorite, the Piña Colada to make this delicious Piña Colada Snow Cone co*cktail.

Summer is peppered with nostalgia for me. Trips to the shore, tubing on the river, long days soaking up the sun, and of course, chasing the ice cream truck.

I, Ashley of Craft & co*cktails Co, love ice cream sandwiches and those bright pink strawberry shortcake bars. But nothing beats a snow cone for me!

I decided to give the snow cone an adult twist and add a little booze.

Naturally, I combined a snow cone with my other summer time favorite the Piña Colada to make one delicious co*cktail to sip on — the Piña Colada Snow Cone co*cktail.

Piña Coladas have come back in fashion with the resurgence of Tiki drinks and culture (only my favorite drinks), as have snow cones.

If you’ve ever been to Gracias Madre in L.A., you know about the boozy snow cones they have!After visiting recently, I got inspired to make my own.

Ingredients Needed to Make a Piña Colada Snow Cone co*cktail

White rum

Piña Colada syrup — I’ve included an easy recipe of sugar, pineapple puree and unsweetened coconut milk.

Angostura bitters

Finely crushed ice

— Angostura bitters: Angostura bitters (which I used) are a classic and work best for tiki style drinks like a Bicardi Rum Punchor Classic Rum drink.

All this optional additions help balance the sweetness here from the pineapple coconut syrup.

What Kind of Ice Do You Need to Make Snow Cones?

As for the ice, you don’t need a fancy machine to make ice for snow cones.

You can make shaved ice in aVitamixor high power blender just blend until the ice is really fine, like snow!

How to Serve Your Piña Colada Snow Cones

Instead of the classic paper cups, I used a glass for more room for the icy creamy goodness.

But you can use the paper cones for the full effect if you wish, just use smaller portions.

For the Piña Colada syrup:

  • 1 cup sugar
  • 1 cup pineapple puree
  • 1/3 cup unsweetened coconut milk

For the Piña Colada Snow Cone:

  • 2 cup snow ice finely crushed ice
  • 2 oz white rum
  • 5 oz Piña colada syrup
  • 10 dash Angostura bitters
  • Pineapple wedges optional for garnish
  • Mint sprigs optional for garnish

Instructions

For the Piña Colada syrup:

  • Cut the skin off of the pineapple and chop up the fruit.

  • Put the pineapple pieces in a blender and blend until smooth.

  • Transfer puree to a pot with sugar. Heat sugar and pineapple puree in a pot on the stove on high until it's about to boil. Take off the heat and let cool.

  • Once cool, strain through a fine mesh strainer into a bottle.

  • Add the coconut milk and shake. Put in the fridge until it is chilled, the syrup needs to be relatively thick to stick to the ice and so it won’t melt the ice quickly.

For the Piña Colada Snow Cone:

  • Add 1 1/2 cups of snow ice to a glass.

  • Pour the rum over the ice.

  • Pour 3 ounces of the Piña Colada syrup over the ice.

  • Pack about a 1/2-3/4 snow ice into a ball and add on top of the glass.

  • Pour 2 more ounces of Piña Colada syrup followed by 10 dashes of bitters.

  • Garnish and enjoy!
