I put a new spin on a basic banana bread recipe by adding in some fresh apples. My apple banana bread recipe is sure to make you smack your lips in appreciation. Seriously it is my new favorite recipe and I know you will enjoy it as much as I do. Plus with the fall bounty of apples, this is another reason to go pick a bushel or two!

Apple Banana Bread Recipe

  • 1 tsp butter
  • 3 large apples
  • nonstick cooking spray
  • 1/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup vegetable oil
  • 2 large egg whites
  • 3 over ripe bananas
  • 1 tsp vanilla extract

Peel, core, and thinly slice the apples. Mix the butter and the apples on the stove and cook covered over medium heat until tender. Mash or puree apples once tender.
Coat a loaf pan with non stick cooking spray. Preheat the oven to 350 degrees.
In a medium sized bowl, mix flours, baking soda, baking powder, salt, and cinnamon. Set aside.
In a large bowl, mix sugar and oil until well blended. Puree or mash bananas and then add to the mixture. Stir in egg whites, apples, and vanilla until combined. Add in flour mixture and stir until just combined.
Pour the batter into the loaf pan and bake 55 – 60 minutes or until a toothpick inserted in the center comes out clean. Cool at least 5 minutes before removing loaf from pan. Serve warm or cool. Enjoy!

Apple banana bread recipe is just TOO GOOD! I have tried making it for my boyfriend and he was completely blown away. He is fond of anything APPLE-ISH! and this was like a total craze for him!

When I saw this recipe, I was so excited. I’ve made this bread 3 times now, and every time…….. is a flop. I don’t know if there is an error in the recipe, but I have tried 3 times with the same result. It is just overly mushy inside. The second time, I cooked it 20 mins longer. The 3rd time I cooked it 20 mins longer then before, and each time the same result. So I concluded that I didn’t undercook it, there must just not be enough flour in it. Could you double check the recipe? I really really want to try this!

I just double checked everything and it is correct. I am thinking maybe your apples are larger than mine. Cooking with apples can be tricky. Try cutting the amount of mushed apple in half. 🙂
